Crazy Cake

From Alison Holst’s Kitchen Diary Collection.

This is Vegan and Gluten Free.

Sift together:

  • 1 & ½ cups GF flour (gluten free if needed)
  • 2 Tblsp cocoa
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp baking soda
  • 1 tsp salt

Add 1 cup sugar.

Stir with fork to combine.

Add ½ cup oil to ingredients without stirring.

Mix together:

  • ¾ cups water
  • 1 tsp vanillla
  • 2 Tblsp vinegar (cider or white vinegar)

Add to dry ingredients, stir until smooth.

Pour into greased ring tin or 20 cm square tin.

Bake 190 C 30-40 minutes.

Turn out onto cooling rack and ice when cool.
