Banana Cake
Adapted from: “What’s Cooking? GF recipes for kids” by the Coeliac Society of Australia Inc.
Ingredients:
- 125g (½ cup) of butter or margarine
- 150g (3/4s cup) caster sugar
- 2 eggs
- 1-3 ripe bananas, mashed (I use defrosted frozen bananas, the ones the kids won’t eat because they have gone too brown!)
- 1 teaspoon vanilla essence
- 300g (1 ½ cups) GF self raising flour (I use 1 cup of Simple Baking mix and ½ cup of my wholemeal bread mix)
- ½ teaspoon of Baking Soda
- 125ml (1/2 cup) milk or Butter milk
Preheat oven to 180 degrees Celsius.
Grease a loaf pan or cake tin and dust with some GF flour.
Cream butter and sugar.
Add eggs one at a time.
Add mashed bananas and vanilla.
Sift flour and baking soda and add to mixture alternatively with milk.
Spoon into prepared pan.
Bake in preheated oven for approximately 45 minutes.
When cooked turn out onto cooling rack.
When cool ice with lemon icing.
